Whether you’re a home chef or you run a commercial kitchen, my passion is restoring your knives using the highest quality techniques based on an extensive background in traditional hand sharpening on whetstones.

Why whetstones?

My entire process and philosophy is based on removing as little material as possible and promoting the integrity of your knife’s temper, geometry, angles, and finish.

This is why I center everything I do around traditional hand-sharpening on whetstones.

Every knife that comes through Kneighborhood Knives - even if it undergoes treatment for repairs on ceramic belts or rotary stones - is hand-sharpened using a unique progression of whetstones.

With a nuanced and intentional approach every step of the way, each blade is given a sharpening treatment that is most conducive to the knife’s performance, aesthetic, and longevity.
